β Step-by-Step Bilona Ghee Preparation:
1. Milking Desi A2 Cows
We begin with fresh milk from healthy, grass-fed indigenous cows like Gir or Sahiwal, known for producing A2 protein-rich milk. These cows are reared in a natural, cruelty-free, and stress-free environment.
2. Boiling the Milk
The fresh A2 milk is slowly boiled over a traditional chulha or low flame to remove impurities and enhance shelf life, while maintaining its natural nutrients.
3. Curd Formation (Dahi)
After cooling, the boiled milk is converted into curd (dahi) by adding a natural starter (previous day’s curd) and letting it ferment overnight. This step is essential to activate the natural probiotics.
4. Bilona Churning (Hand-Churning)
